.... still coughing and sniffing... but i'm not complaining. there is sooo cold outside. it's snowing a bit, but unfortunately this will become rain.i love snow, this white picture everywhere reminds me of my childhood, of past memories, of lost dreams and opportunities. The case is that if i could i wouldn't change a thing of my people, travels, memories. i remembered just now my Egyptian pen pal DoAA, who lived in Alexandria. We lost contact when she got married. She was a great friend, very kind, one of the nicest people i've ever met, highly educated and very committed to her family. Every time i hear something about Egypt, my hear aches. i wish she was ok and happy. I wish we could get in touch again. She may have many kids. My best thoughts may always follow you DoAA.
Here is an egyptian recipe i found: just try it....

Dukkah
- 30 grams (1 ounce, 1/4 cup) hazelnuts
- 30 grams (1 ounce, 1/4 cup) shelled pistachios (unsalted)
- 4 tablespoons sesame seeds
- 2 tablespoons coriander seeds
- 2 tablespoons cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon black pepper berries
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 30 grams (1 ounce, 1/4 cup) shelled pistachios (unsalted)
- 4 tablespoons sesame seeds
- 2 tablespoons coriander seeds
- 2 tablespoons cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon black pepper berries
- 2 teaspoons dried thyme
- 1 teaspoon salt
Toast the hazelnuts and pistachios in a dry skillet, and set aside. Toast the seeds and berries (from sesame to black pepper) in the skillet for 2 minutes, until fragrant, shaking the skillet frequently. Let cool completely.
Combine all the ingredients, and grind to a coarse powder in an electric grinder or with a mortar and pestle. You may have to proceed in two batches.
Pour into a jar, close tightly, and keep somewhere cool and dry.
